Hotel Pastry Trays

Bakerite hotel pastry trays are made for pastry kitchens that need tidy, repeatable results every day. They suit hotels, lodges, canteens and in-house bake programmes where space is tight and trays must move cleanly from prep to oven to rack.

Hotel pastry trays built for busy kitchens

These trays are made for the kind of work that happens behind the scenes in hotel kitchens, where breakfast runs, banqueting orders and late prep all come through the same line. The tray needs to hold shape, stack properly and slide through standard oven racks without wasting time. Our hotel pastry trays are fabricated for that type of use, with straight edges, consistent corners and a finish that is practical for daily handling.

They are commonly used for pastry sheets, scones, savoury bakes, dough proofing support and traybake items. In-house bakery programmes in hotels often need a mix of shallow and deeper pans, depending on the product. We can make trays to suit your oven size, rack spacing and portion plan, whether you are feeding a small lodge kitchen or a large hotel kitchen doing bulk production.

Sizes, depths and tray options

We supply standard and made-to-order trays, because hotel kitchens rarely work with one single recipe. Some operations need a light pastry tray for quick turnover, while others need a heavier tray for denser mixes or repeated service. The main thing is to match the tray to your oven and handling system so you do not end up with wasted gaps or awkward lifting.

  • Common widths and lengths can be made to suit your oven racks and trolley shelves
  • Shallow pastry trays for sheets, squares and traybakes
  • Deeper trays for proofing support or richer mixes
  • Reinforced edges where trays are lifted often
  • Stackable options for stores with limited space
  • Custom holes, lips or special corners where required

Standard hotel tray sizes vary from kitchen to kitchen, so we ask for your exact internal measurements. If your rack takes 600 mm by 400 mm trays, or another common format, we can work to that. If your equipment is older or non-standard, we will make to the dimensions you give us, within practical fabrication limits.

Where hotel pastry trays suit best

These trays are a good fit for hotels, guest houses, conference venues, school kitchens and contract caterers running regular pastry output. They also suit properties with in-house baking for breakfast service, tea service or banqueting. In Durban, Umhlanga, Ballito and inland towns where humidity is high, a tray that cleans well and dries properly is important, especially if it is moving through a hot kitchen one minute and cold store the next.

They work well where the kitchen team needs something neat and predictable rather than a mix of borrowed tins and worn pans. If your operation has shift changes, loading windows or load shedding backups, the trays need to be easy to count, store and rotate. That is where a simple, accurate tray helps. It cuts down on handling issues and makes stock control much easier.

Fitting trays into your oven and handling flow

There is no special power or gas connection needed for the tray itself, but it must suit the oven and the way the kitchen moves product. Before ordering, check the clear opening of the oven, the rack spacing, and whether the trays must pass through a proofer, blast chiller or holding cabinet. A tray that is 5 mm too wide can slow the whole line down, and that small error becomes a daily irritation.

If your kitchen uses gas ovens, electric deck ovens or convection ovens, the tray still needs the same basic checks: heat exposure, lifting points and whether the tray sits flat on the shelf. If the kitchen runs through power cuts or generator use, trays should still be easy to move quickly. We often find that hotel teams prefer a slightly stronger edge where trays are carried by hand a lot, because it helps avoid bending and misalignment.

When you send through measurements, include the inside oven size, the rack size and the finished product size. That lets us set the tray up properly the first time, with less back-and-forth and fewer changes on site.

Care, cleaning and ongoing servicing

Hotel pastry trays should be cleaned soon after use, especially where sugar, butter and egg wash are involved. If residue is left to bake on, the tray will start to foul up faster and cleaning takes longer the next time. In coastal kitchens, regular drying matters as well because moisture left on trays can cause surface marks and shorten service life.

Our workshop supports tray maintenance, which is often cheaper than replacing a full set. Depending on the damage, we can help with tray recoating, straightening, corner repairs, rim repairs, weld repairs and deep cleaning. If a tray has only lost its shape slightly, or one corner has taken a knock, it may be returned to service instead of being scrapped. That is useful for hotels trying to keep spare stock on hand without buying too many new trays.

  • Wash, dry and stack trays after use
  • Avoid harsh scrapers that cut into the surface
  • Keep trays off wet floors and damp stores
  • Inspect rims and corners for movement or dents
  • Send damaged trays for assessment before replacing them

What to check before you order

To make the right tray, we need practical information rather than general comments. Please send the internal tray size you need, the depth, the quantity, the oven type and any special handling points. If the tray must fit a trolley, a proofing cabinet or a particular rack, that measurement should be included too. It saves time and it avoids trays arriving that do not match the kitchen layout.

Also tell us what product you are baking. A tray for pastry squares may need different support from a tray for scones or savoury items. If you are replacing an old tray set, a sample or clear photo helps with matching. If the old trays have bowed over time, we can often improve on the original by adjusting the edge strength or support pattern. Small changes make a big difference when the trays are used every day.

  • Quantity needed and delivery town
  • Oven, rack or trolley measurements
  • Product type and estimated tray load
  • Whether you need standard or custom sizing

What clients say

Questions we get asked

Do hotel pastry trays need power or gas connections?

No. The trays themselves do not need power or gas. They just need to match the oven, rack and handling system in your kitchen.

Can you make trays to fit older hotel ovens?

Yes. If you send the internal oven and rack measurements, we can make trays to suit older or non-standard equipment.

What if our trays are bent or worn but not broken?

Bring them in for assessment. Many trays can be straightened, repaired or recoated, which is often more cost-effective than full replacement.
