Built to suit your depositing pattern
Depositor trays are made for bakeries that need the product to land in the same place every time. We build each tray to match your batter, soft dough or filling pattern, whether you are working with a simple multi-drop layout or a tighter grid for small units. The aim is clean placement, less waste and less time spent correcting uneven fills.
These trays are commonly used on bakery lines where speed matters and the product has to keep shape from the depositor through to the oven. In Durban and the wider KZN area, we also see good demand from sites dealing with heat, moisture and salt air, because a well made tray holds up better than a thin imported pan that starts twisting after a few hot cycles.
- Made to your depositing pattern and product size
- Suitable for batters, soft doughs and portioned mixes
- Can be matched to existing pan sets or new lines
- Useful where repeatable output is needed across shifts
Common sizes, layouts and materials
We make depositor trays in sizes that suit plant bakery equipment, rack systems and manual handling. The final tray can be flat, formed with shallow walls or fitted with divisions, depending on how the product needs to sit before baking. If your line uses a particular footprint, we can work to that exact outside size so the trays still move through your ovens, coolers and storage racks without giving trouble.
Material choice depends on your process. For general bakery use, steel trays are common because they handle repeated heating and cooling well. In harsher environments, or where cleaning is frequent, the finish and thickness need careful selection so the tray does not warp or corrode too soon.
- Tray lengths and widths made to order
- Shallow or deeper tray profiles available
- Fixed partitions, welded dividers or open format
- Options for reinforced edges and corners
Where depositor trays work best
These trays suit plant bakeries making products that need accurate portioning, even spread and neat transfer into the oven. They are also a good fit for retailers with central kitchens, hotels with consistent daily production and contract bakeries making batch after batch under pressure. If your current trays are bending, cracking at the corners or marking the product, a proper replacement set can improve your output quickly.
Depositor trays are often used where a depositor head is working close to the tray surface and the product is softer than standard dough. That means the tray has to stay flat and stay in line, otherwise the deposit pattern shifts and the bake quality suffers. We have seen this often in busy operations in Pinetown and New Germany where the same tray set is run hard, then rushed back into service without enough cooling time.
- Plant bakeries and high volume production lines
- Retail bakeries with central baking rooms
- Hotels, commissaries and food service kitchens
- Sites replacing worn or bent tray sets
What your line needs before fitting trays
Most depositor trays do not need extra power or gas on their own. They are passive bakery equipment, but they must suit the machine, rack or oven system they are used with. Before placing an order, check the tray footprint, lip height, handling clearances and whether the line uses manual loading or a conveyor feed. Small differences of a few millimetres can slow the line or cause jamming.
If the trays are going into a heated process, check the oven temperatures, cycle length and how quickly the trays are turned around. In load-shedding conditions, some bakeries run shorter batches and hold tray sets in rotation, so the tray finish and straightness become even more important. If your operation is near the coast, let us know, because coastal humidity can affect storage, cleaning and corrosion risk.
- Measure outside length, width and depth accurately
- Confirm whether the tray is manual, rack-fed or conveyor-fed
- Give the deposit pattern, hole count or grid detail
- Share oven temperature range and cleaning method
Care, cleaning and ongoing servicing
Good tray care starts with cooling before washing and storing. Hosing down a hot tray can pull it out of shape, especially on thinner material. Use a cleaning method that removes batter build-up without scratching the surface too hard. If deposits are left to harden, they build up at the edges and corners and then the tray starts to sit uneven on the line.
We also provide related bakery services such as tray recoating, deep cleaning, straightening, corner repairs and weld repairs, which helps extend the life of trays already in service. If a set is still mostly sound, a repair can be more cost effective than replacing the lot. That is often the better answer for plants managing budgets tightly in peak season.
- Allow trays to cool before washing
- Remove residue before it hardens
- Store flat to avoid twist and edge damage
- Ask about recoating or straightening if wear is localised
What to send when you ask for a quote
To quote properly, we need clear information on your product and line. A photo of the current tray helps, but measurements matter more. If possible, send the outside dimensions, the tray depth, the deposit pattern, the number of trays needed and whether you want sample sizing or a full production run. If you are replacing old trays, a worn sample is useful too, because we can see where the damage is happening.
Tell us where the trays are going, for example Westmead, Durban, the Upper Highway or another site nationally, and whether you need supply only or a set with repair work included. We work with bakeries that need dependable turnaround times, so the better the brief, the easier it is to match the tray to the job first time.
- Product type and deposit pattern
- Exact measurements or a sample tray
- Quantity required and delivery area
- Any special finish, repair or handling needs
